Ingredients for 4-6 people would be the following:
- A raw octopus from Mariscos Apolo
- Two potatoes
- One onion
- A clove of garlic
- Two tomatoes
- Extra virgin olive oil
- Half a red bell pepper
- Half a spoonful of sweet paprika
- A glass of white wine
- A bay leaf
- Salt
- One chopped parsley
- A glass of white wine
The steps for its preparation are as follows:
- Boil water with salt in a casserole to which an onion and bay leaf are also added.
- When it is boiling, put the octopus in it for a few seconds and take it out. Procedure that we will repeat a total of four times to let it cook for thirty minutes.
- Next we chop the garlic and we brown it with olive oil. Then add the chopped onion, and when it is golden brown add the tomato and the red bell pepper, sauté and sprinkle the paprika, reducing it all at the end with white wine.
- Peel and cut the potatoes, then fry them in a frying pan, once they are ready we introduce them in the recipient in which we are preparing the stew together with the octopus pieces.
- Let everything cook for about five more minutes.
- Sprinkle with chopped parsley and serve preferably in an earthenware dish.
