We already know the winner of the Chef Granajoven contest in its 2018 edition. It is the montefrieño José Baena, who conquered everyone with his dish of Bonito.
This contest, which is born from the Youth Department of the City Council of Granada, and which has the support of companies such as Mariscos Apolo and the newspaper Ideal in sponsorship, was born to discover in the province the young promises of the world of cooking.

Winner of the Chef Granajoven
Of course, the winner of the Chef Granajoven, José Francisco Baena is also from the Poniente. José Baena is a promising young chef from the Granadino village of Montefrío. With this dish is claimed as one of the young promises of the cuisine of the province. A cuisine that includes the products of his land in his recipes and that achieves, because of its history, a unique flavor.
The winning dish
José Baena, winner of the Chef Granajoven, convinced the jury with a dish that mixes the taste of the sea with the Poniente. The ‘Bonito on a bed of asparagus and potato with red wine’ is a dish with a strong relationship with the land but that looks to the sea to find its reference.
The Aliatar hall, venue of the contest
The contest took place in the Aliatar room, which owes its name to a historical character of the Poniente of Granada. Aliatar was the governor of Loja during the war of Granada.
Today the Aliatar hall, one of the most emblematic of the city of Granada, bears his name. Located in the center of the city of the Alhambra, this place has become a point of interest in local culture and entertainment.
