We have already talked about the possibilities of frozen meat and its varieties, such as chicken burgers or frozen loin tape, and we introduced the issue of defrosting, which is simple, but which involves taking a few things into account.
First of all, we warn you that it is not a good idea to leave frozen meat on a plate or cutting board in the open air to thaw gradually -for example, by taking the piece or pieces out the night before-. All food contains a series of bacteria that we get rid of when cooking. When frozen, these foods remain latent -unless it is a cooked and frozen food- and can be reactivated if we do not follow certain safety guidelines. They reactivate, for example, at temperatures above 5ºC and below 60ºC, so hot water is not recommended either.
Three safe ways to defrost meat
If we have the sufficient time, the simplest thing is to defrost the meat in the refrigerator, passing it from the cold of the freezer to the normal cold of a refrigerator. It takes quite a long time, especially if they are big pieces without possibility of cutting them, and without taking them out of the refrigerator it gives us a margin of up to two days to cook it. It is also the safest way of defrosting.
If on the contrary we are in a hurry, we will have to resort to the defrosting mode of the microwave to defrost the meat. Here we run the risk of the meat curdling at some points, so we recommend defrosting small pieces in this way, placing them in the center of the microwave and turning them over from time to time, and thus achieving a uniform effect.
And finally, there is the cold water method -not hot! We submerge the frozen meat in cold water, wrapped in its own container or with bags that insulate it hermetically, since if it gets wet the meat could spoil and lose consistency. Every certain time you can change the water to maintain the temperature and little by little you will be able to verify how the meat loses the rigidity.
