INGREDIENTS:

  • 4 loins of cod
  • 2 potatoes
  • 3 tomatoes
  • 2 onions
  • 2 leeks
  • 2 cloves garlic
  • Chopped parsley
  • 200 ml. cider
  • Oil, salt and pepper

HANDS ON:

1. Cut the spring onions, leeks and garlic cloves into julienne strips.

2. Cook the vegetables in a saucepan over a low heat with a dash of oil and season.

3. Once the vegetables are cooked, add the potatoes cut into small cubes and the crushed tomatoes. Cook all these ingredients for a few minutes.

4. Add the cider and bring to the boil. This way the potato will finish cooking.

5. Place the cod loins over a medium heat for about 10 minutes.

6. It is time to plate and add parsley on top as part of the presentation.
