INGREDIENTS:

Wheat flour

Chickpea flour

Onion

Spring onion

Shrimps

Salt

Baking paper

HANDS ON:

  1. With 40% chickpea flour and 60% wheat flour add water to create the dough.
  2. Draw a circle with the dough (on baking paper) as big as you want the shrimp omelette to be.
  3. Add the shrimps, onion and spring onion, if desired. All additional ingredients should be finely chopped so that they do not stand out.
  4. Place the baking paper with the mixture in very hot oil for about 2 minutes. You will know the exact moment to take out the shrimp omelette when you see it is golden brown.
  5. When you take the omelette out, give it the final touch by adding a little parsley.
