Fish from A to Z: the Trout

Trout is a very popular freshwater fish. It can be found in the rivers of Europe, Asia and North America, although there are also species of sea trout.

The animal

Trout is a species of fish in the salmonid family. As we can imagine, the salmonids are the species close to the salmon and therefore the trout is a freshwater fish. It lives mostly in clean waters of cold water rivers.

Trout are able to swim up rivers just as salmon do. However, to the surprise of many, it does not. Practically all trout stay in the area where they were born all their lives.

In gastronomy

In Spain it is very common to eat trout. It is the fish with the least fat of all oily fish. Low-fat fish, in Spain, tend to be prepared fried rather than cooked or baked. Hence, many of the ways of preparing this fish are fried.

We are all familiar with trout a la Navarra. It is one of the most famous dishes of Navarrese gastronomy and is a very popular dish all over Spain. It consists of frying the trout with a slice of ham or bacon inside.

Genoese trout recipe

This recipe is very typical of the west of Granada and specifically of Riofrío.

Ingredients

1 trout.

100gr of ham.

1 clove of garlic.

2 tablespoons of extra virgin olive oil.

4 tablespoons of white wine.

Parsley.

Preparation

Chop the garlic and the ham as small as desired.

Fry the garlic and then add the diced ham.

Then add the white wine until it disappears.

Then we only have to plate it and add parsley.
