INGREDIENTS:

  • 2 pieces of lobster
  • 600 gr. pasta (spaghetti)
  • 200 g dried tomato
  • 50 gr. of fried tomato
  • 4 cloves of garlic
  • 1 spring onion
  • Extra virgin olive oil
  • Salt

HANDS ON:

  1. We put a pot of water with a pinch of salt.
  2. Prepare the lobsters. Separate the head, claws and tail of the lobster.
  3. Once the pieces have been separated, clean the heads, removing all the juice from inside and set aside. Finally, cut the heads in half.
  4. Add the split heads together with the peeled and cleaned spring onion and wait for the water to boil.
  5. Once the water is boiling, add the tongs to the water and boil for a further 6 minutes.
  6. Remove the entire contents of the pot, strain the water and then cook the pasta.
  7. Cool the tongs in ice water, clean the tongs and cut the tails into 5 pieces.
  8. Add the pasta to the lobster water and cook until it is ready.
  9. In the meantime, chop the dried tomato and garlic.
  10. In a large frying pan, with a little oil, add the tongs and the tails to mark them a little.
  11. Add the garlic and sun-dried tomato and cook for a while.
  12. Once the pasta is cooked, add it to the frying pan together with the juice from the head and the spoonfuls of fried tomato.
  13. Sauté a little and ready to serve!
