  1. Defrost the swordfish fillet by taking it out of the freezer and leaving it in the fridge the day before.
  2. We will use a large frying pan, put two tablespoons of extra virgin olive oil in it and add the swordfish, add salt, cook for a few minutes on each side, remove and set aside.
  3. In the same frying pan (if there is not enough oil, add a little more) fry the chopped leek. Once sautéed, add the white wine and increase the heat a little until it evaporates, then add the orange juice and coconut milk.
  4. Add salt and ground ginger. Cook the sauce for about five minutes over medium heat, then add the swordfish and cook for about three minutes.
  5. Remove and serve with the sauce and a little chopped parsley.
