INGREDIENTS:

  • 1 leg of octopus cooked in its own juice frozen from Mariscos Apolo
  • A few drops of extra virgin olive oil
  • For the potato cream:
  • 2 medium potatoes
  • 30 gr. butter
  • 20 ml. milk
  • One teaspoon sweet paprika
  • A little of the octopus cooking juice
  • Salt
  • Pepper
  • For the presentation:
  • Salad leaves
  • Extra virgin olive oil with paprika
  • Chives, chopped
  • Coarse salt

HANDS ON:

  1. Take the octopus leg out of the freezer and leave it in the fridge while it defrosts.
  2. Once it is thawed, we proceed to prepare the rest of the recipe.
  3. Cook the two potatoes in hot water until they are soft. Once cooked, take them out and leave them to cool a little before peeling. Peel, cut and add the butter, milk, a little of the octopus cooking water and paprika to the same bowl. Season with salt and pepper. Blend with a hand blender and set aside.
  4. Put a griddle on the heat with a few drops of extra virgin olive oil. When it is hot, add the octopus leg. Brown a little on each side, and finally, with the help of a blowtorch, burn the whole surface of the octopus to give it a crunchy touch on the outside.
  5. Serve with the creamy potato soup on the plate, some salad leaves on one side, and the octopus on top of the creamy potato soup. Add a little oil with paprika on top, chopped chives and a little coarse salt. Serve immediately.
